Jake is staying over with us this weekend and after a long day in the office, we are planning to sit down as a family to watch the rugby this afternoon. My husband demanded an appropriately manly, filling, bacon and cheese based snack and this was the result - enough to keep two hungry men, a baby and a staffy happy!
Cut potatoes into wedges. Drizzle with olive oil, salt, pepper and paprika. In the oven at 180 for 30 minutes.
Snip bacon into bits and sprinkle over the potatoes. Back in the oven for 20 minutes or until crispy.
Melt 20g of butter in a pan. Whisk in 20g plain flour to make a roux. Gradually add 1 pint of milk. Add a little vegetable stock and a teaspoon of mustard. Gradually add 200g grated cheese and whisk until melted.
Serve the bacon fries covered (or drowned in my case) in the cheese sauce.
